How to Make Roasted Eggplant in Peanut Curry

 

  • Heat the oil in a heavy bottomed pan on medium heat; add the garlic, red chillies, eggplants, salt to taste and saute the eggplants on low heat with the pan covered until soft and tender
  • In a small bowl, whisk together the peanut butter, Schezwan sauce, oats and coconut milk along with 1 cup of water. Once the eggplants are cooked, pour the peanut butter mixture to the eggplant and gently stir
  • Turn the heat to high and give the mixture a 2 to 3 minute boil until the sauce curry thickens up
  • Adjust the spice and salt levels to suit your taste. Serve with hot steamed rice or noodles

How to Make Curry and Pepper Oats Canapes

 

  • Slight splash of Saffola Blended Cooking Oil, if desired (optional). In a wide saucepan, bring water to a boil. Add Saffola Masala Oats Curry and Pepper oats, stir, and reduce heat slightly. Mixture should still be bubbling briskly
  • Add curry powder and salt, stir to mix. After two minutes of cooking, add 2 tbs onions, stir again. After another two minutes oats should be done
  • Make caramelized onions by caramelizing them in Oil.
  • Now assemble the canape.First cut a slice from the loaf and then toast it. Now put a dollop of pepper oats and top it with shredded basil, cherry tomatoes, caramelized onions and finally sea salt

How to Make Healthy Chicken Tikka with Oats

 

  • Wash the chicken pieces and keep aside. Take a large bowl, mix all ingredients of marinade and make a thick paste. Add all chicken pieces in the marinade and coat them nicely. Cover with a cling film and keep it refrigerated for minimum one hour to soak in the flavours
  • After an hour bring out the chicken. Spread oats on a platter, coat the marinated chicken pieces with these oats and thread them on skewers alternating with onion slices
  • Now preheat your oven to and switch the knob to grill setting and set the temperature at 200 C. Place these skewers on wire mesh placed in middle rack space, do not forget to place drip tray in the bottom. It will not spoil the cavity of your oven and helps in easy maintenance
  • Chicken pieces start to turn golden brown in 10 minutes and let them grill 3 more minutes before switching off oven. Serve hot with green chutney and any healthy salad for a healthy meal
